One of my fav paleo foods is overcooked Kroger brand turkey bacon…it has no carbs, it has 2 grams of protein per slice and I can eat several slices
Once I was at Publix and got the Jenni-O turkey bacon but I could not crisp it up the same way and I threw it out….just FYI.

I ate two this morning @ 8:30 and thought it wasn’t enough food. But I didn’t get hungry again until almost noon. When I eat my bowl of oatmeal with fruit and a side of sausages, I’m starving by 10 a.m.

Thank for including me TPoole. I’m not doing a challenge BUT I have a goal so I’ll tag along. I shall call it, “Sheryl’s 6 week Transition.”
School starts back in 3 1/2 weeks and I want to have 4 truly tasty, relatively easy, family friendly, primalesque dinner meals in the can.
So I’d appreciate folks posting any meals they come up with that fit the bill. I’m not a great cook or improvisor so the more detail the better. Mainly focused on dinner, but breakfast on-the-go and take-with-you lunch ideas are also much needed. THANKS TERRI for starting me off.

Ruth and I are getting a head start! She’s making us spaghetti squash spaghetti with meat and mushroom sauce (a jar of Paul Newman’s sauce plus lean ground beef and fresh mushrooms). And she’s making omelet muffins!
I was so tired after Angie today that I was going to wait until tomorrow night to make the muffins and have Publix rotisserie chicken tonight for dinner. Ruth to the rescue!!!

Cut it in half along the long axis. Be careful because they are hard as hell to cut. Spoon out the seeds. Heat oven to 375. Place squash halves open face down in about 1/4 inch of water. Cook for 30-40 minutes. The longer you cook the sweeter the squash will taste, not necessarily good for a pasta sub. I prefer it a bit crunchy and not too sweet over soft and sweet, but it is good either way. When you take it out it will still seem really hard on the outside, but flip it over and pull out the strands with a fork scraping along the short axis. Cover with sauce and eat!
I used to always overcook it thinking it should get soft-ish, but it was sweeter that way, and a bit more liquidy. I think 30-40 minutes works well, but it probably depends in part on the squash and your oven. Either way, it is hard to go wrong.

Sometimes the squash will release a bit of water/liquid that I usually drain before the sauce goes on.

Hi everyone, and Therese, thanks for doing this.
I have been meaning to really give the primal eating thing a whirl, so I’m in for two weeks. Then I’d like to see how I feel. My understanding is that we are all doing this as we think best, based on individual preferences and goals, so here is what I’m planning.
What I will be avoiding: bread, pasta, rice, chips of all kinds, baked sweets, pizza (gulp), sugary drinks, crackers and processed grains.
What I will not be avoiding: wine, dairy, some starchy vegetables such as potatoes, carrots and fresh corn, and some sugar.
My routine breakfast is Greek yogurt with almonds and fresh fruit, which I will vary with bacon and eggs. My new dessert will be chocolate-covered almonds or a truffle…I only need a little, but I must have something sweet after meals. I will also try to limit carb-heavy vegetables to either lunch or dinner, not both (probably dinner).

Ok, I am in search of good breakfast suggestions. I am fine with meat, but I am not a big egg eater. At this point I am most likely to eat hard boiled tamari eggs (ala marks daily apple). Other than that, bleh. I don’t dislike eggs exactly, I just max out on them before I reach the point of sufficient nutrition. All suggestions welcomed.
